Method

  1. Cut the chicken thighs into bite-sized pieces and place them in a large mixing bowl.

  2. To make the marinade, combine the yogurt, ginger-garlic paste, Kashmiri chili powder, turmeric, garam masala, and the crushed whole black peppercorns, cumin seeds, and green cardamom seeds. Mix thoroughly and let the chicken marinate for at least 30 minutes.

  3. Prepare the mint crema by blending the sour cream, fresh mint leaves, and lime juice until smooth and vibrant green. Set aside in the refrigerator.

  4. Heat a heavy skillet or cast-iron pan over high heat. Add the chicken in a single layer, working in batches if necessary, and cook until charred and fully cooked through, about 6-8 minutes.

  5. Warm the corn tortillas over an open flame or in a dry pan until soft and slightly charred.

  6. Assemble the tacos by placing a generous portion of tandoori chicken onto each tortilla, topping with a drizzle of mint crema, and garnishing with sliced red onions or fresh cilantro if desired.

For the most authentic smoky flavor at home, use the dhungar method: place a small piece of hot charcoal in a metal bowl inside the marinade container, drizzle with oil, and cover tightly for 5 minutes.

Don't skip crushing the whole cardamom seeds; they provide a floral punch that pre-ground powder lacks.

If you prefer more heat, add a finely chopped serrano pepper to the mint crema.

Dry-toast the whole cumin seeds in the pan for 30 seconds before crushing them to release deeper aromatic oils.
